The Early Harvest
Mainly green olives for extra healthy oil with a peppery bite
We harvested from dawn til dusk with the help of 4 friends and 3 workaways from the 4th to the 7th November.

A mixture of green olives and more ripe, rich dark olives for a balance of freshness, heat and creaminess

Farmer's Reserve Harvest
The Farmers Reserve is an especially late harvest with only black olives producing a smooth, rich buttery oil.
The final harvest was done by just us three, the Cova Fullola core team. We were so determined to work we didn't stop to take any pictures! This oil is very small batch and available only in a 250ml tin.
